South Dakota State University researchers, funded by General Mills and Grain Millers with $140,000, are developing a near-infrared spectrometer calibration to measure beta-glucan in oats quickly. The current reference method is slow and costly, and the test would help ensure oat products meet the FDA heart-healthy claim threshold.
This is a food-quality testing development with no direct effect on feed-oat demand or prices.
