A German research team at the Technical University of Munich has identified the compound responsible for the bitter taste in canola meal and where it sits in protein isolates. The team hopes future breeding could remove it, making the meal palatable for human food.
If bitterness can be bred out, canola meal could move from feed into human protein markets, adding demand for a product now sold mainly as livestock feed.
