The Gluten Intolerance Group has worked with major North American oat processors to standardize the purity protocol for gluten-free screening. Companies must now document that their processes follow the new definition to use the 'purity protocol oats' claim.
Standardized purity rules may lower the cost of gluten-free products, which could reduce the premium paid for specialty oats and weigh on milling-oat prices.
