Phytase is a phosphomonoesterase capable of hydrolyzing phytic acid, the main storage form, of phosphorus in plants to yield inorganic orthophosphate, making phosphorus available for bioabsorption. A solid-state fermentation system for microbial phytase production with Aspergillus niger was developed and its culture conditions optimized.
